Persian Joojeh Kabab (Saffron Chicken Skewers)

Ingredients:
For the Chicken:

1.5 lbs (700g) boneless chicken thighs (cut into 2-inch pieces)

3 tbsp Persian rub (Spiceneasy)

½ cup plain yogurt (or ¼ cup olive oil for dairy-free)

1 tbsp lemon juice
-
1 large onion, grated (key for tenderness)

1 tsp saffron threads, crushed + 2 tbsp hot water

2 tbsp butter (melted, for basting)
For Serving:

Saffron basmati rice
-
Grilled tomatoes/peppers

Sumac for sprinkling

Flatbread (lavash or naan)

Marinate the Chicken:

Dissolve saffron in hot water. Mix with yogurt, Persian rub, lemon juice, and grated onion.

Coat chicken and marinate 4+ hours (overnight best).

Skewer & Grill:

Thread chicken onto metal or soaked wooden skewers.

Grill over medium-high heat 4–5 mins per side, basting with melted butter.
