Recipe for Garam Masala

Butter Chicken (Murgh Makhani) Recipe

Serves: 4
Prep Time: 15 mins (+ 2+ hours marination)
Cook Time: 30 mins

Ingredients:

For Chicken Marinade:
  • 500g (1 lb) boneless chicken (thighs or breast), cut into pieces

  • ½ cup plain yogurt

  • 1 tbsp ginger-garlic paste

  • 1 tbsp lemon juice

  • 1 tsp Kashmiri red chili powder (for color, less heat)

  • 1 tsp garam masala(SpicenEasy)

  • ½ tsp turmeric

  • 1 tsp cumin powder

  • Salt to taste

For the Gravy:
  • 2 tbsp butter + 1 tbsp oil

  • 1 large onion, finely chopped

  • 1 tbsp ginger-garlic paste

  • 1½ cups tomato puree (or blended fresh tomatoes)

  • 1 tsp Kashmiri red chili powder

  • 1 tsp garam masala

  • ½ tsp turmeric

  • 1 tsp coriander powder

  • ½ cup heavy cream (or cashew paste for dairy-free)

  • 1 tbsp honey or sugar (to balance acidity)

  • ½ cup water

  • Salt to taste

  • 1 tbsp dried fenugreek leaves (kasuri methi), crushed

Final Touch:
  • 1 tbsp butter

  • ½ tsp garam masala (for garnish)

  • Fresh cilantro, chopped


Instructions:

1. Marinate the Chicken:

  1. Mix all marinade ingredients in a bowl, coat the chicken, and refrigerate for at least 2 hours (overnight for best flavor).

  2. Grill/Broil: Skewer and grill/broil chicken until charred (10-12 mins at 200°C/400°F). Set aside.

2. Make the Gravy:

  1. Heat butter + oil in a pan. Sauté onions until golden. Add ginger-garlic paste and cook for 1 minute.

  2. Add tomato puree, chili powder, turmeric, coriander powder, and salt. Cook until oil separates (~8 mins).

  3. Blend the mixture into a smooth paste (optional for silky texture).

  4. Return to pan, add garam masala, cream, honey, and water. Simmer for 5 mins.

3. Combine & Finish:

  1. Add grilled chicken and simmer for 8-10 mins on low heat.

  2. Stir in crushed fenugreek leaves.

  3. Garnish with a dollop of butter, a sprinkle of garam masala, and cilantro.

4. Serve:

  • Best with naan, basmati rice, or paratha.
