Recipe for Magic Dust

Magic Dust Pork Ribs

*(Feeds 4-6)*

Ingredients:

  • 2 full racks pork ribs (St. Louis cut or baby back)

  • ½ cup Magic Dust (recipe below)

  • ¼ cup yellow mustard (as a binder)

  • ½ cup apple juice (for spritzing)

  • 2 tbsp honey or brown sugar (optional glaze)

Magic Dust Recipe (makes ~1.5 cups):

  • ¼ cup paprika

  • ¼ cup kosher salt

  • ¼ cup sugar

  • 2 tbsp chili powder

  • 2 tbsp ground black pepper

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 2 tsp cayenne (adjust for heat)

  • 1 tsp cumin

(Mix all ingredients and store in an airtight jar.)

Instructions:

  1. Prep the ribs:

    • Remove membrane from bone-side of ribs.

    • Coat ribs lightly with mustard (helps rub adhere).

    • Generously apply Magic Dust on both sides (about 2 tbsp per rack).

  2. Smoke (or bake):

    • Smoker method: Cook at 225°F (107°C) for 5-6 hours over indirect heat (hickory or apple wood). Spritz with apple juice every hour after the first 2 hours.

    • Oven method: Bake at 275°F (135°C) for 3-4 hours on a rack over a foil-lined tray with 1 cup water in the bottom.

  3. Wrap & tenderize (optional):

    • After 3 hours, wrap ribs in foil with honey/brown sugar and a splash of apple juice. Return to heat for 1 hour.

  4. Finish:

    • Unwrap, return to smoker/oven for 30 mins to firm up bark.

  5. Rest 15 mins, slice, and serve with extra Magic Dust on the side.

Why It’s Legendary:

  • Magic Dust’s balance of sweet, salty, and smoky flavors creates a perfect crust ("bark").

  • Works on any meat: Try it on pulled pork, chicken wings, or even roasted nuts.

  • No sauce needed (but pairs well with a vinegar-based mop sauce).

Other Top Uses for Magic Dust:

  1. BBQ Pulled Pork: Rub on a pork shoulder before smoking.

  2. Grilled Chicken: Massage into skin 1 hour before cooking.

  3. French Fries: Toss hot fries with a pinch of Magic Dust.
