Recipe for Magic Dust
Magic Dust Pork Ribs
*(Feeds 4-6)*
Ingredients:

2 full racks pork ribs (St. Louis cut or baby back)

½ cup Magic Dust (recipe below)
-
¼ cup yellow mustard (as a binder)
-
½ cup apple juice (for spritzing)
-
2 tbsp honey or brown sugar (optional glaze)
Magic Dust Recipe (makes ~1.5 cups):

¼ cup paprika
-
¼ cup kosher salt
-
¼ cup sugar
-
2 tbsp chili powder
-
2 tbsp ground black pepper
-
1 tbsp garlic powder
-
1 tbsp onion powder
-
2 tsp cayenne (adjust for heat)

1 tsp cumin
(Mix all ingredients and store in an airtight jar.)
Instructions:

Prep the ribs:

Remove membrane from bone-side of ribs.

Coat ribs lightly with mustard (helps rub adhere).

Generously apply Magic Dust on both sides (about 2 tbsp per rack).

Smoke (or bake):
-
Smoker method: Cook at 225°F (107°C) for 5-6 hours over indirect heat (hickory or apple wood). Spritz with apple juice every hour after the first 2 hours.

Oven method: Bake at 275°F (135°C) for 3-4 hours on a rack over a foil-lined tray with 1 cup water in the bottom.

Wrap & tenderize (optional):

After 3 hours, wrap ribs in foil with honey/brown sugar and a splash of apple juice. Return to heat for 1 hour.

Finish:

Unwrap, return to smoker/oven for 30 mins to firm up bark.

Rest 15 mins, slice, and serve with extra Magic Dust on the side.
