Pat wings dry, toss with baking powder, salt, and black pepper.

Arrange on a wire rack over a baking sheet (for air circulation).

Refrigerate uncovered for 1 hour (helps crisp the skin).

Oven: Bake at 425°F (220°C) for 45–50 mins until golden and crispy.
