Cheesy Tex-Mex Chicken Skillet

Ingredients:

1.5 lbs (700g) boneless chicken breasts or thighs, diced

2 tbsp Tex-Mex seasoning (Spiceneasy)

1 tbsp olive oil
-
1 bell pepper, diced
-
1 small onion, diced
-
1 can (15oz) black beans, drained/rinsed
-
1 cup corn (fresh, frozen, or canned)

1 can (10oz) diced tomatoes with green chiles (e.g., Rotel)

1 cup shredded cheddar or Mexican blend cheese
-
Fresh cilantro, avocado, lime wedges, and sour cream for serving

Tortilla chips or warm flour tortillas (optional)
Instructions:

Season & Sear Chicken:

Toss diced chicken with Tex-Mex seasoning until coated.

Heat oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 mins until browned (it’ll finish cooking later). Remove and set aside.

Sauté Veggies:

In the same skillet, add bell pepper and onion. Cook for 3–4 mins until softened.

Combine & Simmer:

Return chicken to the skillet. Stir in black beans, corn, and diced tomatoes. Simmer for 5–7 mins until chicken is cooked through and flavors meld.

Add Cheese & Serve:

Sprinkle cheese over the top, cover with a lid, and let melt (1–2 mins).

Garnish with cilantro, avocado, and a squeeze of lime. Serve with tortilla chips or as a filling for burritos/tacos.
