Recipe for Thai Rub

Grilled Thai Coconut Chicken Skewers

Prep Time: 20 mins (+1 hr marinating) | Cook Time: 10 mins | Servings: 4

Ingredients:

For the Marinade:

  • 1.5 lbs (700g) boneless chicken thighs (or breasts), cut into 1-inch strips

  • 3 tbsp Thai Rub (SpicenEasy)

  • 1/2 cup coconut milk (full-fat for best flavor)

  • 2 tbsp fish sauce (or soy sauce for vegetarian)

  • 1 tbsp honey or brown sugar

  • 1 tbsp lime juice

  • 2 garlic cloves, minced

  • 1 tsp turmeric (optional, for color)

For Serving:

  • 12 bamboo skewers (soaked in water 30 mins)

  • Fresh cilantro, lime wedges, and sliced red chili

  • Peanut sauce or sweet chili sauce for dipping


Instructions:

  1. Marinate the Chicken:

    • In a bowl, whisk together Thai Rub, coconut milk, fish sauce, honey, lime juice, and garlic.

    • Add chicken strips, coating evenly. Cover and refrigerate for 1–4 hours (longer = more flavor).

  2. Skewer the Chicken:

    • Thread chicken onto soaked skewers, folding strips accordion-style for even cooking.

  3. Grill or Broil:

    • Grill: Preheat grill to medium-high (400°F/200°C). Grill skewers for 3–4 mins per side until charred and cooked through.

    • Broiler: Place skewers on a lined baking sheet. Broil 4–5 mins per side, 6 inches from heat.

  4. Serve:

    • Garnish with cilantro, chili, and lime. Serve with peanut sauce for dipping.

    This is a joy for me as I am very allergic to fish sauce which is in most Thai curry pastes. Now I use this rub as a spice for my version of a Thai curry with some coconut cream, lime and lemongrass. Delicious and a new family favourite!
