Grilled Thai Coconut Chicken Skewers

Ingredients:
For the Marinade:

1.5 lbs (700g) boneless chicken thighs (or breasts), cut into 1-inch strips

3 tbsp Thai Rub (SpicenEasy)

1/2 cup coconut milk (full-fat for best flavor)

2 tbsp fish sauce (or soy sauce for vegetarian)

1 tbsp honey or brown sugar

1 tbsp lime juice

2 garlic cloves, minced

1 tsp turmeric (optional, for color)
For Serving:

12 bamboo skewers (soaked in water 30 mins)

Fresh cilantro, lime wedges, and sliced red chili

Peanut sauce or sweet chili sauce for dipping
Instructions:

Marinate the Chicken:

In a bowl, whisk together Thai Rub, coconut milk, fish sauce, honey, lime juice, and garlic.

Add chicken strips, coating evenly. Cover and refrigerate for 1–4 hours (longer = more flavor).

Skewer the Chicken:

Thread chicken onto soaked skewers, folding strips accordion-style for even cooking.

Grill or Broil:

Grill: Preheat grill to medium-high (400°F/200°C). Grill skewers for 3–4 mins per side until charred and cooked through.

Broiler: Place skewers on a lined baking sheet. Broil 4–5 mins per side, 6 inches from heat.

Garnish with cilantro, chili, and lime. Serve with peanut sauce for dipping.
