Moroccan Mint Lamb Chops

Ingredients:
For the Lamb:

8-12 lamb loin chops (1.5–2 lbs / 700–900g)

3 tbsp Moroccan mint rub (spiceneasy)

2 tbsp olive oil

2 garlic cloves, minced

1 tbsp honey or pomegranate molasses

1 tsp lemon zest

Salt to taste
For Serving:

Fresh mint leaves

Pomegranate seeds (for crunch and sweetness)

Couscous or roasted carrots
Homemade Moroccan Mint Rub (if needed):
*Mix: 2 tbsp dried mint + 1 tbsp each ground cumin, coriander + 1 tsp each cinnamon, ginger, salt + ½ tsp cayenne.*

Marinate the Lamb:

In a bowl, combine Moroccan mint rub, olive oil, garlic, honey, and lemon zest.

Coat lamb chops evenly and marinate 1 hour at room temp (or up to 4 hours refrigerated).

Grill: Sear over high heat 3–4 mins per side for medium-rare (145°F / 63°C internal temp).

Stovetop: Heat 1 tbsp oil in a cast-iron skillet and sear 2–3 mins per side.
